Spiked Eggnog Ganache Cupcakes recipe

The cakes have a shot of rum in the batter, and if you have concerns about serving them to children, feel free to omit it. But like most boozy cakes, the alcohol bakes out only leaving behind nuances of flavor. The buttercream frosting is made from an eggnog ganache (white chocolate + eggnog = eggnog ganache!) and it gets whipped with butter and confectioners' sugar for a creamy, decadent cupcake covering. Grate a little fresh nutmeg over each mound of frosting and you've got Christmas in a cupcake! This amazing recipe I founded at Truly's site.

Yield: 12 cupcakes
Source: cake recipe adapted from Intoxicated Cupcakes with Sprinkle Bakes original frosting

Soft Sugar Cookies

These soft sugar cookies are a terrific alternative to rolled cookies for Christmas or any time you want to bake with the kids. There's no cutting required, and these cookies positively melt in your mouth. This lovely recipe I founded at site.

These are the ingredients you will need

1 cup granulated sugar
1/2 cup shortening
2 large eggs
1/2 cup sour cream
1/2 tsp. vanilla
3 cups all-purpose flour
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. kosher salt
sprinkles or colored sugar for decorating
This is how you make it

With an electric mixer, beat sugar and shortening together.

Beat in eggs, sour cream and vanilla.

In a medium bowl, whisk together flour, baking powder, baking soda and salt. Add to wet ingredients, on low speed, until incorporated.

Refrigerate dough 30 minutes.

Preheat oven to 350 degrees F.

Form dough into 3/4-inch balls. Roll in colored sugar and place on ungreased cookie sheets. Flatten slightly with your fingertips. Bake 9-10 minutes until just set. The sugar cookies may appear underdone. Let them cook on the baking sheets for 10 minutes and they will firm up.

30+ Simple salad recipes

How many times have you heard someone in your family say this?
“I don’t want that for dinner. We just had the same thing last night.”
More often than not when it comes to making use of leftovers this is a common occurrence in most households. What happens next? The food stays in the refrigerator for 3 or 4 days then it hits the trash.
What a waste of good food and money.Main course salads can be made with Mexican or Asian fixings as well. Add some chow mien noodles and more to give the salad an Oriental flare. Don’t forget your dressing. There are a vast amount of flavorful dressings available these days to top any great salad.
Salads don’t have to be what was once known as rabbit food anymore. Have fun creating your main course salads and remember to let your taste buds and health consciousness lead the way.

Homemade Ferrero Rocher Truffles recipe

I especially love this recipe for a homemade version because you can control the sweetness (especially if you use homemade Nutella). Plus making homemade versions of candy will always be an impressive gift. This amazing recipe I founded at Tessa's site.

ingredients:
For the filling:
  • 3 cups crushed hazelnut wafer cookies (I used Pepperidge Farm’s Pirouettes)
  • 3 cups finely chopped toasted hazelnuts
  • 1 1/4 cups (10 ounces) Nutella

For the chocolate coating:
  • 1 cup semisweet chocolate chips
  • 1 teaspoon coconut oil (or vegetable oil)
  • 1 1/2 cups finely chopped toasted hazelnut

directions:

For the filling:

Line a baking sheet with a nonstick baking mat or parchment paper. In a large bowl combine the crushed hazelnut wafer cookies, hazelnuts, and Nutella until well combined. Mixture will be sticky. Chill the mixture in the refrigerator until firm enough to shape, about 30 minutes. Shape into 1/2-ounce balls about the size of a teaspoon. Place balls on prepared baking sheet then chill in the freezer until they are hardened, about 15 minutes.

For the chocolate coating:

Meanwhile, combine the chocolate and oil in a medium microwave-safe bowl and microwave in 30 second bursts, stirring between each burst, until the mixture is melted and smooth. Stir in the chopped hazelnuts. Let the mixture cool slightly.

To assemble:

Using a toothpick, dip each chilled truffle into chocolate, coat completely, then place back on the baking sheet. Once all the truffles are dipped, place the baking sheet in the refrigerator until the chocolate coating has hardened, about 15 minutes. Place truffles in mini cupcake liners or wrap in foil to serve. Truffles can be stored in the refrigerator in an airtight container for up to 3 days.
